These Banana Protein Breakfast Cookies are made with nutritious ingredients like oats, bananas, nut butter, and clean protein powder. I love to eat these alongside some eggs or yogurt in the morning, as a pre/post workout snack, or in between meal-type-of-snack.
Health Benefits:
- Bananas: Packed with vitamins, minerals, and natural sugars, providing a quick energy boost.
- Nut Butter: A good source of healthy fats and protein, keeping you satiated. I use peanut butter, but almond butter or sunflower butter would be excellent subs!
- Rolled Oats: Rich in fiber and complex whole-grain carbohydrates for sustained energy.
- Protein Powder: Boosts the protein content, aiding in muscle repair and keeping you full for hours. I use TumLove!

Also, these cookies can be made gluten and dairy free by using gf oats, dairy free chocolate, and suitable protein powder. And they are made with no added sugar (only using the ripe bananas to sweeten)!

Banana Protein Breakfast Cookies
Ingredients
- 2 ripe bananas
- Ā¼ cup peanut butter
- 1 cup old fashioned oats use gluten free if needed!
- Ā¼ cup vanilla protein powder use a dairy free powder if needed
- 1 large egg
- 1 tsp vanilla extract
- Ā¼ tsp salt
- Ā½ cup dark chocolate chips
- Ā½ tsp cinnamon optional
Instructions
- First, preheat the oven to 350 F. Line a baking sheet with parchment paper, or just grease it, and set aside.
- In a large bowl, mash the ripe bananas with a fork until smooth. Stir the the peanut butter, egg, and vanilla extract.
- Next, add the oats, cinnamon, and salt. Stir until fully combined. Mix in the chocolate chips.
- Scoop the cookie "dough" into 10-12 even-sized balls and place on the parchment lined pan. Slightly smash the cookies down with a spoon before baking. Bake the cookies for about 12-16 minutes until slightly golden brown on the edges.
- Let the cookies cool slightly before enjoying! Leftover cookies can be stored room temperature for up to 3 days, otherwise keep them in the fridge for about a week. These make the best meal prep!
