I went through a phase where I made this berry oatmeal bake AT LEAST 2x a week. It was a good phase, but it ended too soon. This oatmeal bake is soft and satisfying, with an addicting texture. It’s made with oatmeal, banana, lots of berries and naturally sweetened with a bit of maple syrup. It’s made in one pan, which means no extra dishes for you! This recipe is perfect for meal prep throughout the week. I often eat it for breakfast, but also sometimes as a dessert (topped with whip cream;)

Fortunately, this ingredient list is pretty basic. I love the versatility of this recipe because there are numerous amounts of substitutions and you can use either frozen or fresh berries. Sometimes I top my oatmeal bake with a yogurt “glaze” which adds a touch of creaminess to this recipe! It’s totally optional though. See the list and subs below:
Oatmeal Bake Ingredients:
- Old-fashioned oats (gluten free or regular)
- Eggs
- Milk (I use almond milk, but any dairy or non-dairy option will work well)
- Banana (or applesauce)
- Coconut oil (or olive oil)
- Maple syrup (honey or agave works too)
- Baking powder
- Cinnamon
- Salt
- Vanilla extract
- Frozen or fresh triple berry blend (I use this brand, but any type of berry-sized fruit will work)
Glaze ingredients: optional!
- Plain greek yogurt (any yogurt, even non-dairy will work)
- Maple syrup or honey (for a touch of sweetness, but it depends on what yogurt you use!)
- Cinnamon
Why should I make this recipe?
There are many reasons why you should make this berry baked oatmeal, but the most primary is because it’s delicious It’s also SO dang easy to make and it’s perfect for hosting a brunch or a gathering of any sort. You don’t even need a bowl for this recipe! You will just mix everything together in the 9×13 pan you will use to bake the oatmeal in. It’s no mess with minimal dishes. This recipe is also great because I can make it on Monday and have it as a grab and go breakfast or snack throughout the week. Not to mention it’s gluten and dairy free meaning most people can enjoy this yummy recipe!

Berry Oatmeal Bake
Ingredients
- 3 cups old-fashioned (rolled) oats or gluten free!
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- 1 ripe mashed banana or ½ cup applesauce
- ⅓ cup maple syrup
- ¼ cup melted coconut oil or olive oil
- 2 large eggs
- 1¾ cup almond milk any dairy or non dairy works!
- 1 tsp vanilla extract
- 1½ cups fresh or frozen berries
For the optional glaze:
- ½ cup plain greek yogurt adjust sweetness if your yogurt is already sweetened!
- 1 tbsp maple syrup or honey or to taste!
- ½ tsp cinnamon
Instructions
For the oatmeal bake:
- First, preheat the oven to 350°F. Grease a 9×13 inch pan.
- Now, add ALL of the ingredients into the greased pan. I add the berries last because their juices seep (especially if frozen), but there is no wrong way to do this. Simply mix all the ingredients together until fully combined.
- Lastly, place the pan into the oven and bake for 35 minutes or until the middle is set and the edges turn golden-brown.
- Drizzle the optional yogurt "glaze" once at room temp or individually so the yogurt doesn't melt everywhere. Other topping ideas include a drizzle of maple syrup, extra berries, or even whip cream! Serve immediately or reheat at a later time. Enjoy!
For the glaze:
- In a small bowl add the yogurt, syrup, and cinnamon. Mix with a spoon then drizzle as desired on the oatmeal bake or by slice. Make sure the oatmeal bake isn't too warm when you glaze, otherwise it will melt the yogurt!
