These honey nut cereal balls provide a perfect crunch and addicting chew that will leave you satisfied until your next meal. The best part?! They are made with wholesome ingredients like nuts, rice puffs, and honey! Now you can meal prep these scrumptious little bites for when that mid-morning or mid-day snack need hits.

As discussed above, we all need a little pick-me-up throughout the day. Meal prepping little energy cereal bites is the perfect way to keep the energy up in between meals. These honey nut cereal bites can also duo as a healthy dessert. Made with honey, which provide the perfect amount of flower-like sweetness, and paired with cinnamon, practically a match made in heaven. These sweet and salty honey nut cereal balls remind me exactly of honey nut oat cheerios, but way better! This spin-off of that cereal will keep you a little more satiated and fulfilled while also giving you an addicting delicious snack. Also, these honey nut cereal balls only take a few minutes to whip up. Thirty minutes now goes a long way when crammed for time, but your stomach is telling you it needs food.
What do I need to make these honey nut cereal bites?
Most of the ingredients you will need to make these snack bites are probably already in your kitchen! There are plenty of areas to make substitutions or swaps depending on your preferences and what you have on hand. The most important ingredients you will need are rice puffs, nut butter, and honey.
The rice puffs I use have no added sugar and come in a big bag that I always have on hand. Use drippy almond butter or any drippy nut or seed butter of your choice to give these honey nut cereal bites a nutty goodness that will satisfy you in between meals.
I like to use honey in this recipe, but agave syrup or maple syrup will also work here! You will also use 1 cup of nuts in this recipe. While I personally love hazelnuts and almonds, any nuts will work. If you only have almonds or you only have cashews, that’s fine! Use up what you have! Just keep in mind you will want your nuts to be unsalted. Otherwise, just make sure to reduce/eliminate the salt in this recipe!
Honey Nut Cereal Bites
Ingredients
- ½ cup almond butter any drippy nut or seed butter will work too!
- ⅓ cup honey or agave/maple syrup
- 2 cups rice puffs
- ½ cup crushed hazelnuts or any nut!
- ½ cup crushed almonds or any nut!
- ½ tsp salt
- 1 tsp vanilla extract
- ½ cup dark chocolate use refined sugar free if desired! *
- 1 tsp coconut oil to help the chocolate melt
Instructions
- First, blitz your nuts in a food processor or finely chop them. You want them small enough that they aren't annoying to eat in your little bites! Add the crushed nuts into a medium bowl with 2 cups of rice puff cereal.
- Next, combine your nut butter, honey, salt, and cinnamon in a small pot. Mix together over medium heat until bubbly on the sides. It will take about 5 minutes. Then take your pot off of the heat and add your vanilla extract. Your wet mixture should be goey, but still pourable.
- Pour your wet mixture into your nuts and cereal and stir to combine. Make sure everything is coated evenly in the mixture.
- Place the mixture in the refrigerator for 30-60 minutes. You can also place it in the freezer for 20 minutes. The helps the mixture cool and become more formable.
- While the balls are chilling, melt your chocolate (if desired) and coconut oil in the microwave or over the stove.
- Then remove your cereal mixture from the fridge and roll or scoop it into small balls. I use a one-ounce cookie/ice cream scooper!
- Coat or drizzle your honey nut cereal bites in the melted chocolate. Let sit at room temperature or in the fridge until set.
- The last thing to do is to enjoy them! Store in the fridge in an airtight container for up to a week.
