Honey Nut Cereal Bites

Ingredients

  • ½ cup almond butter any drippy nut or seed butter will work too!
  • cup honey or agave/maple syrup
  • 2 cups rice puffs
  • ½ cup crushed hazelnuts or any nut!
  • ½ cup crushed almonds or any nut!
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ cup dark chocolate use refined sugar free if desired! *
  • 1 tsp coconut oil to help the chocolate melt

Instructions

  • First, blitz your nuts in a food processor or finely chop them. You want them small enough that they aren't annoying to eat in your little bites! Add the crushed nuts into a medium bowl with 2 cups of rice puff cereal.
  • Next, combine your nut butter, honey, salt, and cinnamon in a small pot. Mix together over medium heat until bubbly on the sides. It will take about 5 minutes. Then take your pot off of the heat and add your vanilla extract. Your wet mixture should be goey, but still pourable.
  • Pour your wet mixture into your nuts and cereal and stir to combine. Make sure everything is coated evenly in the mixture.
  • Place the mixture in the refrigerator for 30-60 minutes. You can also place it in the freezer for 20 minutes. The helps the mixture cool and become more formable.
  • While the balls are chilling, melt your chocolate (if desired) and coconut oil in the microwave or over the stove.
  • Then remove your cereal mixture from the fridge and roll or scoop it into small balls. I use a one-ounce cookie/ice cream scooper!
  • Coat or drizzle your honey nut cereal bites in the melted chocolate. Let sit at room temperature or in the fridge until set.
  • The last thing to do is to enjoy them! Store in the fridge in an airtight container for up to a week.

Notes

*If you do not want to use chocolate or do not have the time, they will still be just as scrumptious!
