Fun fact, in Minnesota, our state muffin is the blueberry muffin. I mean, for obvious reasons, they are the best. Do you know what is almost better than a blueberry muffin? These healthy blueberry muffin bites! The perfect bite-sized snack. Soft and scrumptious, they remind me of the mini muffins Little Bites, the classic after-school snack. What makes these healthy blueberry muffin bites better is that they are refined sugar-free, except you can’t even tell;)

How do I make these muffin bites?
These healthy blueberry muffin bites are SO easy to make and only require a few ingredients! I know a lot of times when I buy berries, sometimes I don’t use them in time, and they begin to get soft. I will not eat soft blueberries, so if you are like me, this recipe will ensure you never waste soft blueberries again. First, take your soft (or fresh and firm) blueberries and place them on a parchment-lined baking sheet. You just roast the blueberries in the oven for a bit then you are left with these half-dried, half-fresh blueberries that explode in your mouth! Then you will mix the “dried” blueberries into the other ingredients. Roll them into bite-sized snacks, leaving you with the most amazing snack.
What do I need to make these blueberry muffin bites?
Well, blueberries, of course. This recipe is fairly simple in terms of ingredients.
- Blueberries
- Almond flour
- Coconut flour
- Salt
- Vanilla extract
- Almond butter
- Maple syrup
- Apple juice
There are also a few substitutions you can make! The almond butter can be switched with cashew butter or sunflower butter (I would not recommend subbing for peanut butter). If you want to skip the roasting of your fresh blueberries, use store-bought dried blueberries. Any dried fruit will work too!
An important note about coconut flour is that you cannot substitute any other flour. Unfortunately, coconut flour is one of those oober-absorbant flours that are simply one-of-a-kind. You won’t regret the purchase. Most recipes I use it with only require a small amount, and it lasts much longer than expected! I use this one from Cub! The apple juice might seem like a strange ingredient to these, but it really provides the bites with some extra moisture that is needed to balance out the absorbent coconut flour! Apple sauce and white grape juice will be a good sub; just don’t use apple cider vinegar! If you don’t have those ingredients, almond milk plus a little extra maple syrup should do the trick!
Healthy Blueberry Muffin Bites
Ingredients
- 1 cup fresh blueberries*
- ¼ cup drippy almond butter
- ¼ cup maple syrup
- 2 tbsp apple juice
- 1 tsp vanilla extract
- ½ cup almond flour
- ½ cup coconut flour
- ¼ tsp salt if your almond butter is salted, use less!
Instructions
- Preheat oven to 350° F. Line a aluminum baking sheet with parchment paper.
- Place the blueberries on the baking sheet and bake for about 40 minutes, unitl bubbly. Once the blueberries are out of the oven and begin to cool, start mixing the other ingredients.
- In a medium bowl, mix the wet ingredients first. Whisk together the drippy almond butter, maple syrup, apple juice, and vanil extract.
- Next, the dry ingredients. Mix the almond flour, coconut flour, and salt until well combined. Add the blueberries and gently stir.
- Roll the dough into 10, bite-sized balls and enjoy! Store in fridge for up to a week!
