Healthy Blueberry Muffin Bites

These healthy blueberry muffin bites are just like the classic Little Bites (besides better, of course;). Practically perfect in every way!

Ingredients

  • 1 cup fresh blueberries*
  • ¼ cup drippy almond butter
  • ¼ cup maple syrup
  • 2 tbsp apple juice
  • 1 tsp vanilla extract
  • ½ cup almond flour
  • ½ cup coconut flour
  • ¼ tsp salt if your almond butter is salted, use less!

Instructions

  • Preheat oven to 350° F. Line a aluminum baking sheet with parchment paper.
  • Place the blueberries on the baking sheet and bake for about 40 minutes, unitl bubbly. Once the blueberries are out of the oven and begin to cool, start mixing the other ingredients.
  • In a medium bowl, mix the wet ingredients first. Whisk together the drippy almond butter, maple syrup, apple juice, and vanil extract.
  • Next, the dry ingredients. Mix the almond flour, coconut flour, and salt until well combined. Add the blueberries and gently stir.
  • Roll the dough into 10, bite-sized balls and enjoy! Store in fridge for up to a week!

Notes

*If you do not have fresh blueberries, feel free to use store-bought dried blueberries! Try the unsweetened ones for a refined sugar-free snack! Other dried fruits like cherries will work well in this recipe too!
