Well, thank you for asking;) Thankfully the ingredient list is quite short. Look below for the ingredients and possible substitutes.
- Pure canned pumpkin
- Vanilla protein powder (I use TumLove!)
- Almond butter (cashew butter or sunflower butter would be great subs!)
- Coconut flour (oat flour or almond flour will work too, just see notes on how much)
- Maple syrup (honey will work too)
- Pumpkin pie spice (or cinnamon!)
- Vanilla extract
- Salt
- White chocolate (optional, but recommended)
Allergen friendly?
This recipe is super allergen-friendly! It is both gluten free and dairy free (assuming the protein powder and white chocolate falls under those categories) and can be made nut-free!
The beauty of this recipe is the simple ingredients that make such a yummy high-protein snack or sweet treat. I could seriously eat the whole pan. They are just that good.

Pumpkin Pie Protein Bars
Ingredients
- 1 cup pure canned pumpkin not pumpkin pie filling
- ¾ cup vanilla protein powder
- ¾ cup drippy almond butter cashew or sunflower work well too!
- 1 tbsp coconut flour or 2 tbsp of oat flour or almond flour
- 1 tbsp maple syrup for a touch of sweetness!
- 1½ tsp pumpkin pie spice
- ½ tsp vanilla extract
- ¼ tsp salt
- ¼ cup white chocolate chips use any variation that suits your dietary needs best! add some coconut oil to help the chocolate thin if needed
Instructions
- In a medium bowl, combine ALL the ingredients besides the white chocolate together. Stir with a spoon or spatula until fully combined.
- Press the protein mixture into a parchment lined pan or contianer. I noramlly use half of an 8×8 inch square pan, but do whatever works best for you.
- Next, melt the chocolate in the microwave and pour over the bars. Sprinkle with additional pumpkin pie spice if desired. Place the bars into the freezer for about 20 minutes before slicing.
- Enjoy! Store any leftovers in the refrigerator for up to a week.
