In a medium bowl, combine ALL the ingredients besides the white chocolate together. Stir with a spoon or spatula until fully combined.
Press the protein mixture into a parchment lined pan or contianer. I noramlly use half of an 8x8 inch square pan, but do whatever works best for you.
Next, melt the chocolate in the microwave and pour over the bars. Sprinkle with additional pumpkin pie spice if desired. Place the bars into the freezer for about 20 minutes before slicing.
Enjoy! Store any leftovers in the refrigerator for up to a week.
