Pumpkin Pie Protein Bars

These pumpkin pie protein bars are so soft like pumpkin pie, but are made with wholesome pantry ingredients. This is the best, most easy, no-bake snack for autumn!

Ingredients

  • 1 cup pure canned pumpkin not pumpkin pie filling
  • ¾ cup vanilla protein powder
  • ¾ cup drippy almond butter cashew or sunflower work well too!
  • 1 tbsp coconut flour or 2 tbsp of oat flour or almond flour
  • 1 tbsp maple syrup for a touch of sweetness!
  • tsp pumpkin pie spice
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup white chocolate chips use any variation that suits your dietary needs best! add some coconut oil to help the chocolate thin if needed

Instructions

  • In a medium bowl, combine ALL the ingredients besides the white chocolate together. Stir with a spoon or spatula until fully combined.
  • Press the protein mixture into a parchment lined pan or contianer. I noramlly use half of an 8x8 inch square pan, but do whatever works best for you.
  • Next, melt the chocolate in the microwave and pour over the bars. Sprinkle with additional pumpkin pie spice if desired. Place the bars into the freezer for about 20 minutes before slicing.
  • Enjoy! Store any leftovers in the refrigerator for up to a week.
