I have made versions of this recipe over the years, but I have finally dialed in the perfect ratios to make this recipe absolutely BOMB. These paleo chocolate chip cookies are soft with a crunchy edge, naturally sweetened, and completely grain free!

Maybe you are wondering, what even is paleo? Well, paleo is a type of diet that essentially encourages people to eat whole, unprocessed foods that were likely eaten during the Paleolithic Era. It focuses on a grain-free diet, only natural/unrefined sugars, and no artificial sweeteners. While I never promote dieting of any type, many paleo recipes are packed with nutritional benefits. Plus most of them are very yummy;)
Because of that, these cookies are gluten and dairy free! A perfect, allergen-friendly treat;)
What ingredients do I need to make these paleo chocolate chip cookies?
Well, I am so glad you asked! The ingredient list is pretty basic, but coconut flour is the only item people may not have on hand unless they use it regularly. In my opinion, it should be a pantry staple because it’s so yummy and great for fun, healthy recipes. Coconut flour cannot be substituted because of its properties to absorb liquid. They also help the cookies hold their shape, while keeping them soft. However, check the ingredient list below!
- Almond flour
- Coconut flour
- Olive oil (or melted/cooled coconut oil or ghee)
- Eggs
- Coconut sugar
- Baking soda
- Salt
- Vanilla extract
- Paleo-friendly dark chocolate*
*I starred the paleo-friendly dark chocolate because I personally do not use paleo friendly chocolate. The chocolate I use (BakeBelieve) has inulin and erythritol which are technically artificial sweeteners. I personally do not mind using them because I love the chocolate and I can buy it cheap at Sam’s Club. So in my opinion, use whatever chocolate you have on hand if you are not following a strict paleo diet.

Paleo Chocolate Chip Cookies
Ingredients
- 2 large eggs
- ¾ cup coconut sugar
- 2 tsp vanilla extract
- ½ cup olive oil or melted/cooled coconut oil or ghee
- 1 ½ cup almond flour
- ⅓ cup coconut flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup paleo-friendly dark chocolate see notes above*
Instructions
- First, preheat the oven to 350° F. Lightly grease a baking pan and set aside.
- In a large bowl, whisk together the oil, coconut sugar, eggs, and vanilla extract until smooth and homogeneous.
- Next, add the almond flour, coconut flour, baking soda, and salt. Stir with a spatula until combined. Gently stir in the chocolate chips. Let the dough sit for 5 minutes before scooping to allow the coconut flour to absorb all the liquid.
- Using a spoon or a cookie scoop, scoop out 12-16 cookies onto the large baking tray. Then gently flatten each cookie with a spoon before placing into the oven. Sometimes I like to add extra chocolate in top to make them more pretty;)
- Bake the cookies for 15 minutes or until lightly golden brown on the edges. Let them cool for 5-10 minutes before serving!
- Enjoy these cookies fresh from the oven before storing in an airtight container or plastic bag on the counter. Make sure the cookies are completely cooled before storing!
Notes
- Top with flaky sea salt
- To achieve a fresh, from-the-oven taste, reheat a cookie in the microwave for 12 seconds. It makes it so gooey again.
