Life is busy, and finding a nutritious and satisfying snack can be a challenge. However, with a little creativity and some wholesome ingredients, you can easily whip up a batch of healthier peanut butter chip granola that not only satisfies your sweet cravings but also nourishes your body. I’m not kidding when I say this granola is actually quite addicting, and in my opinion, there is nothing wrong with that. Peanut butter and chocolate is my all-time favorite food group. Well, I am so glad you asked. This granola is made with good-for-you-ingredients and is much lower in sugar than the store bought stuff. I’m all for convenience, but considering this granola is so easy to make and tastes 10x better than the pre-made stuff I’d rather make this any day. It’s crunchy, nutty, chucky, and satisfies my cravings all day long.
Ingredients:
- Old fashioned oats (gluten free works too!)
- Drippy peanut butter
- Coconut oil
- Maple syrup
- Walnuts
- Vanilla extract
- Salt
- Dark chocolate chips (I use BakeBelieve)
The oats are packed with fiber, the peanut butter adds healthy fats and protein, and walnuts are a brain-boosting food that helps with focus! Plus the unrefined sugar by using maple syrup adds the perfect touch of sweetness.
What should I use this granola in?
Granola usage is limitless. I mean this stuff is crunchy, sweet, nutty and it rarely lasts a day in my house. I love adding granola to my yogurt bowls in the morning, on top of smoothies, or my personal favorite, eating it straight from the jar. It’s a nutrient dense snack or topping that you really can’t go wrong with.

Peanut Butter Chip Granola
Ingredients
- 3 cups old fashioned oats
- ½ cup drippy peanut butter
- ¼ cup melted coconut oil
- ¼ cup pure maple syrup
- 1 cup chopped walnuts
- 1 tsp vanilla extract
- ¼ tsp salt
- ⅔ cup dark chocolate chips optional, but HIGHLY recommended
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
- In a large bowl, combine all the ingredients for the granola except the chocolate chips. Mix until evenly coated.
- Dump the granola mixture onto the baking sheet and press down to form an even layer.
- Bake the granola for 20 minutes then rotate the pan. DO NOT break up the granola, or else you will not be left with big chunks. Bake for an additional 12-15 minutes until the granola is "dry" and golden brown on the edges.
- As soon as the granola comes out of the oven top with the chocolate chips. Let them melt as the granola cools for at least 30 minutes. Then break the granola up and enjoy! Store leftovers in an airtight container like a mason jar for up to a week!
