Peanut Butter Chip Granola

This easy peanut butter chip granola is crunchy, chunky, nutty, sweet, and very addicting. It's 10x better than the store bought stuff and it's made with better-for-you ingredients!

Ingredients

  • 3 cups old fashioned oats
  • ½ cup drippy peanut butter
  • ¼ cup melted coconut oil
  • ¼ cup pure maple syrup
  • 1 cup chopped walnuts
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • cup dark chocolate chips optional, but HIGHLY recommended

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
  • In a large bowl, combine all the ingredients for the granola except the chocolate chips. Mix until evenly coated.
  • Dump the granola mixture onto the baking sheet and press down to form an even layer.
  • Bake the granola for 20 minutes then rotate the pan. DO NOT break up the granola, or else you will not be left with big chunks. Bake for an additional 12-15 minutes until the granola is "dry" and golden brown on the edges.
  • As soon as the granola comes out of the oven top with the chocolate chips. Let them melt as the granola cools for at least 30 minutes. Then break the granola up and enjoy! Store leftovers in an airtight container like a mason jar for up to a week!
