Maple Walnut Oatmeal

The best protein-packed, cozy breakfast. Perfect for autumn!

Ingredients

  • ½ cup old-fasioned oats any type of oats will work! *See notes
  • ½ cup almond milk unsweetened (any nut milk or cow's milk will work)
  • ½ cup water
  • ½ tsp vanilla extract optional
  • 1 pinch salt
  • ½ scoop protein powder I use vanilla flavored powder!
  • ½-1 tbsp pure maple syrup plus more for topping!
  • ½ tsp cinnamon
  • ¼ cup walnuts

Instructions

  • Add all ingredients besides the protein powder and walnuts into a small pot.
  • Cook on medium heat, stirring frequently. Once it starts to boil, set a time for about 3-5 minutes. Cooking the oatmeal for longer makes your oatmeal so much more creamy!
  • In a small dish, put your protein powder and about 2 Tbsp of water or milk and whisk or shake to combine. * Making your protein powder into a smooth consistency before adding it to our hot oats will ensure we do not have lumps or curdling!*
  • Once oatmeal is cooked to your preference, add the protein powder mixture. Stir until everything is combined, smooth, and creamy.
  • Next, pour your cozy oatmeal into a bowl and top it with walnuts. Drizzle with some extra maple syrup and milk or cream if desired before serving!

Notes

*Any oats will work here! If you only have quick oats, steel-cut oats, or instant oats, just follow those directions along with mine!
*It's also not completely necessary to mix your protein powder in water. It's just not to make the oats too thick after they have already absorbed the liquid from the pot.
*If you are not using protein powder, omit this step! The reason why I recommend not making putting your protein powder IN your oatmeal right away is that it can curdle. Every protein powder is different, so maybe that won't happen with yours. Play around with it! In my experience, sometimes my powder curdles in my oatmeal, and other times it doesn't. So to keep it consistent, I just add it after!
