Cinnamon Roll Energy Bites

These cinnamon roll energy bites taste like a gooey, melt-in-your-mouth cinnamon roll. They are made with better-for-you ingredients and make the perfect dessert or snack.

Ingredients

  • 1 cup rolled oats use gf if needed!
  • 1 cup pitted and packed medjool dates (about 12-14 dates) see notes for details
  • 1 cup walnuts or pecans
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  • First, soak your dates. If your dates are naturally super soft and you have a strong food processor, you can skip this step. Otherwise, boil some water and pour over your pitted medjool dates. Let them sit for about 5-10 minutes. Then drain the dates from the water (some water is okay, they don't need to be patted dry or anything like that)!
  • Next, add your walnuts and oats to your food processor. Blitz until crumbly. Add the soaked and drained dates, vanilla, and cinnamon. Let the food processor run until it begins to form a cookie dough-like constancy. It should take about 2-3 minutes.
  • Once your mixture is done, you will smell cinnamon rolls. It's one of my favorite parts of this recipe. Moving on;) scoop out 12-14 bite sized dough balls and roll in between your hands. Each bite will be about a heaping tablespoon.
  • Once you have rolled out the energy bites (eat one then), store in an airtight container in the refrigerator for about up to 2 weeks. They are the best grab-and-go snack or dessert.
