Easy Guacamole

This easy guacamole is made in the blender with only a handful of ingredients. It's flavor packed and perfect for a small batch, no leftover type of deal.

Equipment

  • 1 small blender or any food processor type machine

Ingredients

  • 2 ripe avocados with pit and skin removed
  • ¼ cup cherry tomatoes optional*
  • ¼ cup red bell pepper optional*
  • 1 tbsp lemon juice or lime!
  • ¼ tsp salt
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  • Add the avocados, tomatoes, and peppers into the small blender along with the seasonings and lemon juice. Pulse the guac mix until semi-combined. I like to keep some chucks.*
  • Scoop the guacamole into a serving bowl before topping on burrito bowls, tacos, or all by itself. Store any leftovers in an airtight container in the refrigerator for up to 48 hours.
  • Serve and enjoy!

Notes

*The vegetables are not necessary for this recipe, but it does add TONS of flavor and texture. You could totally use all peppers or all tomatoes, or any other veg that floats your boat! Make it your own!
*The more you blend, the more the color will become tinted red and not as green due to the tomatoes and peppers added. You choose how smooth you want your guac, just keep the color change in mind.
*Serving: this makes about 1 and 1/2 cups of guac.
