Macadamia Nut Granola Bars

These macadamia nut granola bars are Hawaiian-inspired. Sweet, nutty, soft, and SO addicting they will become your new go-to!

Ingredients

  • 1 cup drippy almond butter or cashew or sunflower butter!
  • ½ cup raw honey or maple syrup/agave
  • 1 tsp vanilla extract
  • 1 cups rolled oats use gf if needed!
  • 1 cup puffed rice cereal or crushed rice cake!
  • ½ cup white chocolate chips optional
  • ½ cup roughly chopped macadamia nuts use almonds or cashews for a sub!
  • ½ cup unsweetened coconut flakes can omit if you do not like coconut
  • ¼-½ tsp salt depending on prefrence

Instructions

  • Line an 8x8 inch baking pan with parchment paper. Set aside.
  • First, combine honey, almond butter, and vanilla extract together in a small saucepan. Heat the mixture on medium-low until the it's warm, not hot. Stir occasionally and remove once it's warm and paste-y like. It will begin to look like a dough, glue ball. We don't want it too thick, but it should be thicker than what you started with.
  • Next, in a medium bowl add the oats, puffed rice, coconut flakes, salt, and chopped macadamia nuts. Then, add the stove-top mixture and stir until combined. Add the white chocolate chips in after the mixture begins coming together.
  • In a 8x8 baking pan, firmly press the mixture into the pan with your hands or the bottom of a glass. Cover the bars and place them in the fridge for at least one hour before you slice and enjoy! Store leftovers in the refrigerator for up to a week!

Notes

*Make sure to heat the mixture on medium-LOW, otherwise the almond butter can get too hot and becomes too thick.
