Cookie Dough Overnight Oatmeal

This overnight oatmeal recipe actually tastes just like cookie dough and I'm not sure there is anything better than waking up to that. It's high protein and made in advance, so it's perfect for meal prep!

Ingredients

  • ½ cup oat flour you can use gluten free oats if needed!
  • 2 tbsp vanilla protein powder
  • 2 tbsp vanilla unsweetened yogurt I use a dairy free yogurt, but greek yogurt would be great here!
  • 1 tbsp nut/seed butter my favorites are drippy peanut butter or almond butter!
  • ½ cup unsweetened almond milk any milk works here!
  • 2 tbsp dark chocolate chips
  • ¼ tsp vanilla extract optional
  • 1 pinch salt

Instructions

  • In a small mason jar, mix together all the ingredients (including the chocolate chips) until smooth and fully combined.
  • Cover and set the oats in the refrigerator for 2-12 hours. It can be left longer, but you may need to add more liquid as the oats are quite absorbant.
  • Enjoy! Top with additional yogurt, nut butter, and chocolate chips for extra measure;)

Notes

*Feel free to use a heaping 1/2 cup whole oats in this recipe in place of the oat flour if you want more texture, or do not have time or a processor to make oat flour. If you don't know how to make oat flour, check out my notes above the recipe!
