Chocolate PB Protein Oatmeal Bake

Ingredients

  • 2 ripe bananas
  • 2 scoops chocolate protein powder *see notes below for whey protein
  • 2 tbsp drippy peanut butter
  • 2 tbsp maple syrup
  • 1 cup old-fashioned oats gf work great!
  • 1 cup almond milk any milk works!
  • ½ tsp baking soda
  • ½ cup dark chocolate chips I use a stevia-sweetened brand (also optional)
  • 1 pinch of salt optional!
  • ½ tsp vanilla extract optional!

Instructions

  • FIrst, preheat the oven to 350 F. Grease a 9 x 9 inch baking dish with nonstick spray.
  • Right to the pan, mash the ripe bananas until smooth.
  • One the bananas are mashed add the remaining ingredients and mix until fully combined and smooth. Top with the chocolate chips and bake for 25-30 minutes.
  • Let the oatmeal bake cool for at least 10 minutes before slicing. Top with an extra drizzle of peanut butter and serve with some yogurt for an extra boost!
  • Store leftovers in the refrigerator for up to a week!

Notes

*If you are using whey protein powder, the consistency might be a little thicker. Before baking the "batter" should be comparable to a thick (and chucky) pancake batter. If it doesn't smooth out, add a splash more milk.
